i was thinking a robust porter but not sure what grains would be best to "cap" with so its not too thin, other wise i was thinking for ease of effort to do a pale or IPA?
grains on hand are:caramunich 1,2,3, carapils, victory, crystal 60,75,flaked oats, aromatic malt, carafa special, choco malt, special b, roasted barley, caramber, brown malt
hops is kinda limited but have amarillo, columbus, US fuggles, mt hood, sterling, US goldings

Well it looks like you have plenty of crystal malts to supplement your grain bill with. I like the darkest crystal you have, and even some victory in there for a toasty flavor. The caramber would add an interesting touch to your recipe, but I don't have access to that one. I'm planning a baltic porter soon, and would like to know what you decide on, plus your results.
