Here's the run down: One gallon batch... US-05, 2 lbs Alexanders pale extract, 1 lb honey, .5 lb Honey malt, .25 Munich, .25 wheat. Steeped grains in 2/3 gal in grain bag for 40 mins starting at 140 degrees F ending up at 160. Removed grains, brought to boil, took off heat to add 2 lbs extract, boiled for ten mins. turned heat off added honey. set pot with lid on in snow, shook half gallon of cold tap water in a glass jug (gasses dissolve better with colder temps)added cooled wort, pitched rehydrated us-05 at 79 degrees. OG 1.112.
OK so It started right up and fermented for 5 days 68 degrees, but I keep reading that us 05 should be fermented in low 60s to attain higher alcohol levels. Its been 12 days in primary, I took a reading of 1.048 which is only 8.8% abv and its bubbling at once every two mins.
should I move it to a colder room and wait? Any suggestions for a newb? thanks

Hey Kyle, I suggest you bring it down to about 62 and give it a few more weeks, that's a huge OG and needs time.
Also, next time pitch at a colder temp (65 ish) to protect against off flavors
Some ale yeasts can handle over 70 degrees but will finish out cleaner if given more time at a lower temp
