I'm having a little trouble finding this malt on Rebel Brewer though, so I might need to look elsewhere. Anyone make anything similar to this?

Which yeast strain? Belgian yeast?

Have you tried Belgian Pale before? I've used Castle's and I thought it was OK. It's definitely unique, quite bready and grainy.

Overall looks like a great hop combo (I like Amarillo and Cascade together).
