Subject: Drinking my first all grain as I post

As I recall it was 5lb american 2 row .5 lb 80l crystal and 1lb flaked wheat for the mash on a 3 gallon batch added .5 lb brown sugar I forget what hops I used right now but will find out on the next visit to the hb shop. As it sits the abv is 6.9% I bottle in quarts and am on the second pint.......comfortably numb comes to mind right now, it is a very amber not quite brown color mid range on carbonation excelent head retention a bit heavy on malt sweetness for my taste(but then again I like steel reserve for a every day junk beer) hop aroma is little hop flavor is there but lacking. As I recall I used pellets fuggles and cascade. Cascade was flavor as it had the least aa % again I will post later on the whole recepie. Its great! Would I make it again...no, But it is really good, just too sweet for me. MAybe if I used 20-30l crystal nstead.

What was the FG?

Crystal is crystal as far as sweetness goes. The differences in crystal has more to do with toasted flavors and/or caramel flavors. There may be subtle differences in the amount of sweetness each one contributes but it is very little IMO.

If it is too sweet then either cut down on the crystal or up the hops...

fg was 1.004 The carmel flavor is high too, maybe that effects the perceived sweet taste.

Wow, 1.004 and it's too sweet. that's pretty dry. What was the IBU or at least what was your guess...

Yeah its crazy to think that with a 1.004 gravity your beer could be dry at all. It sounds like I would love it. I'm a big malt/yeast fan, and prefer sweeter, complex brews, as opposed to dry/hoppy brews. I would say up the hops, and lessen the crystal some. There are plenty of grains out there that will lent different flavors, without being cloying or sweet. Try aromatic, special roast, munich, biscuit, victory, ect. I love the complexity that adding different crystal malts brings to the table.

i used perel for bittering 5.2% for 60 and fuggles 4.3% for 10 minutes. The cascade was for a diffrent beer I made. I also decided its not so sweet Just too heavy with the carmel flavor.
