I was just wondering, what would the best hop combo for a nice honey beer?
I realize that it's all personal preference. Just wondering if anybody has
any suggestions. Also, I plan to add the honey 5 minutes before flameout.

If you want the honey flavor , don't add until fermentation is complete. It will all get scrubbed away! It's actually better to use honey malt for that honey flavor.

brewed an awesome honey kolsch over memorial day weekend with the intention of serving it this weekend for the 4th. it's been killer only being able to sample one or two, gotta save the rest for the party....
Did a mini mash, 2.25 lbs of Pilsner, .25 lb vienna .25 honey malt, .25 munich, plus 4lb extra pale LME, and .5 lb honey.
did some tettnang hops @60 and some perle @15 & 5.
White Labs German Ale Yeast
It came out crisp, & clear with just a hint of honey. I personally would've wanted a bit more hoppiness, but since I'll be serving this to the girlfriends and her friends, I figured I'd go a little lighter on this one.

If you really want a honey flavor use honey malt. Since honey is sugar it ferments out almost completely.

So even if I add my honey at flameout, it will still ferment and I wont get honey flavour. I am a
celiac, is Honey Malt gluten free?

No, I doubt honey malt is gluten free.

But you can add the honey after primary fermentation is over and you will get a decent honey flavor.
