I'd move the 50min to 20min and use less crystal but that personal. I do like using munich in my pales. Might want to bump up the ibus but that depends on how dry you get it and how bitter you like it.

Overall looks good.

I love using Centennial/amarillo/cascade but 75% of the hops goes from 30-20min and down. like 1oz at 20, 10, 0min

Thank you, AZ. I reduced the crystal and I altered the hop schedule a bit. I also added an oz of Cascade. I got the IBUs up just over 40 with some 20 min and down additions. I have to use up those homegrown Cascade hops - there are lots more on the bine as we speak.

I'd suggest leaving the crystal as is, add 1-2# Vienna and move the 50 min cascade to 20 and add .2 oz Magnum @ 60...

My brew this weekend is very similar, also using up last two years homegrown cascades - I just did the calcs in Promash:

3 lbs Munich
6 oz 60L
7 lbs 2-row

1 oz cascade 60 min
.5 oz cascade 30 min
.5 oz cascade 15 min
.5 oz cascade 5 min

70% eff gives me 1.052 and 40IBU's

I like suggestions to move the 50 min cascade to 20 but the original grain bill sounds perfect. Guess you'll get many different ways to go about it with similar results.

Moving the 50 min. addition to 20 will leave the beer underhopped unless you compensate for it somehow. What's wrong with the original recipe, anyway???

sorry, I meant to say replace the IBUs. the original recipe is fine but with cascades some people prefer a lot at the finish. the original is more balanced, but what fun is that?

I'm certainly not one to worry about balance! You sure could move the 50 min. Cascades to 20, but there are already Centennial and Amarillo FWH additions, as well as Cascade at 10 and Centennial dry hop. It really comes down to personal preference. For me, the more heavily late hopped beers I do, the more I find that even massive doses of late hops don't give me the quality of bitterness I prefer like a dose at around 60 does. YMMV. Which is what I said the original recipe looked good to me.

CBB, I'm doing an all Cascade tomorrow. 1 oz. FWH, 1 at 60, 1 at 20, 1 at 5, 1 at 0, and 1 for dry hopping.

Yeah, I'll be brewing mine today as well Denny. What's your grain bill look like? Sticking with the APA category? What average AA do you use for the homegrown cascades? I just used what Promash suggested (5.75)...

EDIT: I saw in another thread that you are working today DC, but I'd still be interested in your grain bill

CBB, 11 lb. pale, 1 lb. Munich 10L, .5 lb. C60. I'm using 7% for the Cascades, which is the default in my copy of PM, but I think it's more than that. We'll see what it tastes like. Shooting for a 56 OG and about 50 IBU.....we like 'em bitter around here!

Thank you for all the input, guys. I chose the following hop schedule for this brew:

0.50 oz. Centennial FWH
0.50 oz. Amarillo FWH
1.00 oz. Cascade 30 min.
1.00 oz. Cascade 20 min.
1.00 oz. Centennial 10 min.
1.00 oz. Cascade 0 min.
1.00 oz. Centennial Dry Hop.

I will see how this one turns out and adjust according to preference. I still have plenty of homegrown Cascade hops to experiment further.
