I am planning one getting of each of the wyeast VSS for this summer, and splitting a 12 gallon batch into three 4 gallon batches. I have used the 3726 Farmhouse and 3711 French Saison, and I really like them both, but I have never tried the 3725 Biere de Garde. Does anyone have any experience with this strain? From the little bit of information available about it, I think it is the Fantome primary yeast strain. If so, why do you think they call it their Biere de Garde strain?

Just to say that I've got the 3711, and I made my best batch all year with it.
Ferments at lower temps than other saison yeasts I've looked at.

Would the VSS Saison (3711) work in a wit? Just curious as to others thoughts on this. I'm interested in making a Saison as well, but want something a little lower in gravity (even though, I suppose, some Saisons only come in at 5.5 abv)...

I don't think it would make a very to style wit...AFAIAC, wit and saison a pretty different
