I brew a brown ale I call ''Dauntless Brown" but for a summer ale you could leave
the brown out. The key I guess it Nottingham dry yeast, it works fast.
AG I'm guessing,
5 gals
6 lbs. 2-row your choice
2 lbs. munich ''
4 ozs. Carared use what you have that's 'bout 20'L
4 ozs.Wheat malt
2 ozs. choco for brown ale-leave it out if you want
2 ozs. Roasted barley for brown ale- leave it out if you want
If you brew tomorrow or the next day you might could pull it off
the dry Nott. 2 - pack or three you could reach TG in 5 days, dont ferment to
cool , expect some fruit and if you keg I bet you could pull it off, I think you
could bottle and pull it off but you never know for sure, but I like a challenge.
That's my 2 cents
Oh and hop it how ever you like

If you brew something at the lower end of the alcohol range and lower ibu's, you should do well. Maybe a single malt ale, 8lbs Pilsner malt maybe a pound of crystal 20, about 3.7-4.0 ABV with some EKG and Saaz. finish with Nottingham or US-05 yeast. bottle next weekend and it'll be ready for you.

Leave all the dark maltz out and replace the munich with vienna. You could do all 2-row but if you could put that vienna in there it will make a for a better flavor, a little more malty but not much.IMOHO it's the clean and quick of Nott.Dry that will make the beer you're looking for in that time frame, so tweek dude tweek. This will be more gold than blond so use some Cara hell or 10' or Carafoam or Dex-malt to get the colour but you'll figure it out I'm sure. I done this 'cause "I'm gonna run out of beer 'cause I got lazy or for what ever reason but keeping a few paks of NottDry yeast kept me in beer. So go nuts and good brewing!

I just did this one:

"Quick Witted"

5lbs DME (could sub wheat DME as well)
2.5oz Styrian Goldings @ 15

== Boil for only 15 mins ==

Zest of 4 small oranges @ FO

Pitch Wyeast Belgian Witbeer Yeast.

If you can keg, it'll be nice and drinkable by July 4. Perfect for the summer heat.

I know you mentioned no on the wheat, but I'd second simpledad's comment. Wit is a really quick turnaround beer- should be done fermenting in 2 weeks, ready to keg/carb, and they're better if you drink them young anyway.

I have a family reunion July 4th and was thinking of still trying to get a wit done in time myself (have a kolsch conditioning already).

I would think any good IPA would be a good quicky. The heavy hops and higher abv. strength I believe would negate any ill effects of short conditioning. JMO. IPA's are my favorite "Speed Brew".

see anytime you have to put fruit in your beer theres something wrong...lime in corona. orange peels in wheats.....not beer ,no thanks....and sorry, but not a hophead.

I disagree, if you make it PART of the beer, it's just like any other ingredient. If the beer is so boring that you have to put in a slice of fruit AFTER it's finished, then something is wrong.

"see anytime you have to put fruit in your beer theres something wrong..."

That's like saying you don't like coffee because you are lactose intolerant.

Who says you have to put fruit in wheats? The last time I put a slice of lemon in a wheat...well let's just say I was probably drinking underage.

I agree with the wit idea for quick beer.

I just did 50/50 wheat/2-row (a pound of the wheat was unmalted), wit yeast, ,no fruit or corriander (not that I'm against them ingredents) two weeks. Nice cloudy white tint and very tasty.

I'm a bit behind on my brewing and trying to replenish some summer supply. Just did two 5 gals of an applejuice concentrate + dark turb sugar cider (the recipe is on here somewhere...). Tasty, real refreshing for summer, and cheap as hell to make (I bumped up the recipe to a bit over 5%abv and the materials cost around $12).

Should be done real quickly, and the brewing time for it is extremely short if you're low on free time. Also a perfect one to whip out after your friends have had a few and you don't want them drinkin' up all your 'nice' beers.

Cheers!

Oh yea...,the fourth went very well! The blonde ale was only at 2and half weeks young, forced carbed it three days...went fast. They really didnt like the oat stout or the dubbel....until sat night when the blonde ran out and then things got kicked up a notch with the dubbel going around!! yee ha!! Great stuff.

I thought maybe that's what it was but I had to ask. I keep some different sugars and DME around for you never know and I'm gettin' good effs. It just makes good since.
Bottled my Blonde(Gold be more like it) 1.052 to 10 in 10 days. It was done in 6 days just put it in the fridge for a couple days. The things we do for family and friends
