Ingredients
  • 5# dark DME
  • 1# crystal 80
  • 1/4# roasted barley
  • 1/4# black patent
  • 1# light DME
  • 1 cup black strap molasses
  • 1.25 oz nugget (60 min)
  • .5 oz hallertauer (10 min)
  • 3-4 oz fresh grated ginger (15 min)
  • 2-3 inches cinnamon stick (15 min)
  • Wyeast 1098 british ale yeast
  • 3/4 cup corn sugar (bottling)
Preparation
Follow standard brewing procedure adding hops and spices according to schedule.

Other Specifics I brewed this during the winter so the fermentations temp was 60 degrees.

This beer is best after it has been in the bottle at least a month. before then the ginger flavor is a little strong. This was a very tasty beer with a nice thick head and full flavor. The ginger finish complements it well.

so can we presume that this brew is vegitarian friendly ? (yikes i would hope so) lol. my 'first' cpl of brews included a wild attempt at the infamous pumpkin ale. does this brew taste similar given the ginger and cinn spices ? i may actually give this a try cause i like 'pumpkin pie' spiced flavored ales and this recipe seems safe (minus the animal genitalia of course:-) let me know if there are any tweak s you would make next time round. thks! jffga atlanta, ga.
