Ingredients
  • 7 Pounds Light DME
  • 2 Pounds Amber DME
  • .5 Pound Crystal 20
  • 1 oz. Fuggles (60 Minutes)
  • 1 oz. East Kent Goldings (60 Minutes)
  • 1 oz. Bramling Cross (30 Minutes)
  • .5 oz. Cascade (15 Minutes)
  • 1 tsp. Irish Moss (15 Minutes)
  • .5 oz. Cascade (5 Minutes)
  • 1 oz. Challenger (Dry)
  • White Labs WLP001 California Ale Yeast
Preparation
Steep the crystal malt for 30 minutes. Add the Malt extracts. Boil for 60 minutes adding the hops as noted in the ingredients.

Other Specifics Alcohol content according to my calculations is pretty high at 7.29 ABV which isn't a bad thing. I've never dry hopped with challenger hops before and can't really recall seeing many recipes that call for it. I figured I'd give it a go as it is apparently

The color is a little light for an IPA. Regardless, It is a tasty beverage.

Just tried a bottle of this today and the aroma is very light... I'm actually kind of disappointed. Hey.... I tried something new (dry hop w/ challenger) perhaps that works with other styles... anyone have any idea? perhaps add an oz. of cascades as dry hop? I dunno... I'll try it out another time and report back. Other than the light aroma, it is very tasty.. Nice bitterness and the high alcohol content isn't overpowering.

I'm down to 2 bottles of this brew and am going to convert it to all-grain as I only brew all-grain now. I mentioned before that I was disappointed. I don't know what I was thinking.. this is a tremendous beer and 5 gallons only lasted 3 or 4 weeks. The goal was to make an english IPA and I certainly succeeded. -Neb

I am experimenting with dry hopping myself. I just finished brewing up a batch of an americal IPA. I tried to emulate Avery's IPA. I also got a pretty high OG with 1.077. I used 7LBS DME and 1/2 dark crystal and 1/2 wheat malt. Used Nugget, Centennial and Styrian Goldings hops. I'm going to try dry-hopping with 1 1/2 OZ Centennial as I was looking for a citrusy aroma. Did you use hops pellets, plugs or leaves? That could affect how much oils got inpregnated in the brew. I also think the dark crystal malt gave a much darker hue than the last IPA I tried with light crystal.
