- Wyeast # 1056
- 3# cooper's Light DME
- 2# munton's Light DME
- 2# Maris Otter pale ale malt
- 1# Breiss pale ale malt
- 1/2# 50ºL crystal
- 1/2# Victory malt
- 1/4# wheat malt
- 1/2# cara-pils
- 60 min.1 oz Columbus 15%aau (pellets)
- 30 min. 1 oz Centennial 10%aau(whole)
- 10 min. 1 oz Chinook 12.5%aau(pellets)
- steep--1 oz Centennial 10%aau(whole), and 1 oz Cascade 6.3%aau(pellets)
- Dry hop secondary -- 1 oz. Cascade 6.3%aau, and 1 oz Columbus 14.5%aau--both pellets

| Mash all grains in 5 qts 168º water treated with 2 tsp gypsum, stabilize @ 152º for 1 hour. Sparge with 9 1/2 qts 170º water. Top up kettle, dissolve DME, and bring to boil. Skim scum and start hop schedule after 10 minutes of boiling. 1 tsp Irish moss in boil for 20 minutes. Cool, pitch, and rack off trub 8 hours later. |

OG is 1.063 as calculated by the "recipator". IBU's -- 83 abv -- 6.8% |

For an all-grain version, mash 11# (ttl) Maris Otter with specialty grains @152º for 60 minutes (or untill conversion)... |

Hope you don't mind a question from a virgin. I'm kicking it off with your recipe. I see there are two fermentation steps. Is the second the bottle or another fermentation. I'm fine either way I have two car boys and a bucket. If there are two. How long should I wait after bottling to drink? |

Woh !! Willie, do your self a favor and start your brewing experience with some less-challanging recipe. Make it easy the first time, you will have plenty of things to do and things to worry about, without the hassle of a complicated recipe. Get yourself a Kit-beer,most of these make very tasty beers, that you will be proud to call your own. After you have made a few batches, then try some recipes.<br>The fermentation is done in two steps, the first for about a week, then transfer the beer into the secondary, leaving the sediment behind.Leave it there for another week, then add the corn sugar and bottle.<br>It takes about 2 weeks for the carbonation to form and be drinkable.<br>Good Luck, Jim |
