Hammertoe Pale Ale

Ingredients
  • 5# Munton's DME
  • 1# Breiss 20L crystal
  • 1/2#Breiss cara-pils
  • 3# Breiss 2row brewer's malt (toast one half lb @ 350 for 10 min)
  • 5 0z Cascade pellets 6.3 aau
  • wyeast #1056 american ale 100ml pitchable tube
  • 2/3 cup corn sugar to prime
Preparation
Infusion mash all grains in 4.5 qts water w/ 2 tsp gypsum @ 150 for 1 hr. mash out @ 168 for 10 min. sparge w/ 9 quarts of 170 water. Top up kettle to 4 gallons, disolve DME, and bring to a boil. Add 2 oz cascade @ begin of boil. add 1 oz cascade @ 30 minutes. Add irish moss @ 10 min. Add 1 oz cascade - off boil, and steep while cooling. Top up fermentor to 5 gallons, pitch yeast, and rack off of trub 8 - 12 hrs later, and attach blow-off tube. Dry hop with 1 oz cascade in secondary.

It's only been in the bottle for a week and a half, and it's one of the tastiest beers I've ever had (or made, for that matter!!!). Can't wait to make it again--this time with Freshops Cascades!!!

Made it again... Even better! Used Freshops Cacades (8.1% AAU!!) at a rate of 14.5 bittering, 8.1 flavor, 2 oz steep, and dryhopped with 1 oz cascade pellets, and 1 oz chinook pellets. Nice 'n piney. Also subbed Cooper's DME for 3# Munton's -- shop was out. I think I like Cooper's better. It's a bit more dry...
