Ingredients
  • Wyeast 1098 British #1
  • 8 oz. Crystal malt 40L
  • 3 # light dried malt extract
  • 2 # extra-light dried malt extract
  • 1.5 oz. Kent Goldings 5.5%alpha
  • 1 oz. Cascade 5.8%alpha
  • 1 oz. Fuggles 4.8%alpha
  • 1 tsp Irish Moss
  • 1 tbl Gypsum
  • 1 tsp Finings Gelatin
  • 3/4 cup corn sugar (priming)
Preparation
1. Add gypsum to 2.5 gal water and steep grains for 30 mins @ 158F. Sparge and discard. 2. Boil malt extract and bittering hops (1oz KG + 1/2 oz Fuggles) for 60 min. 3. Add Irish Moss @ 30 min. 4. Add flavoring hops (1/2 oz. Fuggles) @ 25 min. 5. Add aroma hops (1/2 oz. Cascade) @ 4 min. 6. Pitch yeast @ 70F. 7. Rack to secondary with finings gelatin and dry hops (1/2 oz Cascade + 1/2 oz. KG)

Comments
Adapted from 'Tits Up in the Mud Pale Ale' - (Papazian, Homebrewer's Companion). Addition of Cascade hops for aroma and dry-hopping add a nice floral touch to the hop-nose of an otherwise traditional Pale Ale.
