Ingredients
  • 11.25 lbs American Pale 2 row
  • 13 oz English Chocolate Malt
  • 6 oz Cara-Pils
  • 4 oz American Black Roast Malt
  • 1 oz American Roasted Barley
  • 1 oz Northern Brewer Hop Pellets (7.7%)
  • .75 oz Cascade Hop Pellets (6.5%)
  • 1/2 tsp Irish Moss
  • White Labs California ale yeast
Preparation
Mash @ 155 F for 60 Minutes (3:1 grain lb:water gal ratio). I didn't mash out, go for it if you like.Transfer to boil pot, boil for 90 minutes.Add all hops after 30 minutes ( 60 to go )Add Irish Moss after 75 minutes ( 15 to go )At this time, volume should be around 5.5 gal.Force cool, pitch when temp is around 70 F.

Comments
This was my first all grain brew, it's still young, but an amazing beer anyhow. Came close to my original gravity target, but final gravity was somewhat lower than expected. Has a distinct cascade hop nose, medium body, and a dark coffee like finish. I'll be doing this one again soon, as it may become one of the house beers.

Like the name of brew.

You are on right track going all-grain and your grain bill is impressive and thoughtful.

How do you get a cascade aroma when you boiled your hops for 60 minutes(if I am reading your instructions right)...all aroma would be gone...it is in last 15 minutes or less where aroma is derived from hops. Do your recipe again and add .75 ozs of casdcade @ 3 minutes and see if you notice a difference.

I concur. You shouldn't be getting ANY hop aroma. My thoughts after reading the recipe was...oh, he went with a nice malty finish. Which is totally cool! Looks like a good one, but yeah, throw a touch of your favorite american hop in at the end.
